About the role

Minera Panamá S.A. is seeking a Chef and Butcher to lead culinary and meat‑processing operations at its remote mining camp. The role combines high‑volume food preparation with full‑service butchery, ensuring nutritious meals for a large resident workforce while maintaining strict hygiene standards.

Key responsibilities

• Plan, prepare and cook a variety of meals for a large population, meeting dietary requirements and hygiene standards.
• Perform all butchery tasks including cutting, trimming, cleaning, portioning and storing different types of meat.
• Manage food inventory, including ordering, receiving and proper storage to minimize waste.
• Coordinate efficient food service operations to ensure timely and consistent meal delivery.
• Maintain accurate records of consumption, inventory and production.
• Ensure compliance with health, safety and hygiene regulations in kitchen and butchery areas.
• Lead and supervise kitchen staff, providing training, scheduling shifts and monitoring performance.
• Collaborate with Camp Administration to improve food service and address resident feedback.
• Operate and maintain kitchen equipment safely and correctly.

Required profile

• Proven experience as a Chef and Butcher in high‑volume food service, preferably in remote camp settings.
• Knowledge of camp administration related to food services.
• Strong background in catering operations, menu planning and food preparation.
• Familiarity with food safety, hygiene standards and waste management procedures.
• Ability to handle inventory, production and personnel records accurately.
• Experience leading and motivating kitchen teams.
• Current food handling certification or equivalent.
• Capacity to work independently and as part of a team in demanding environments.
• Excellent communication and interpersonal skills.
